When we only had enough white wines for one release in the spring, we always felt like this wine could benefit the most from 6 months of bottle age as Grenache Blanc is one of the most structured of the Rhone whites. We ferment and age our Grenache Blanc in stainless steel so its vibrant acids and exotic savory notes are pushed to the forefront. It has blossomed beautifully, showing classic fruit notes of pear and white peach, with savory notes of fennel pollen and white flowers.
