2020 Mourvèdre Rosé

The first rosé we have ever produced is 100% Mourvèdre coming from Hollyhock Vineyard in the Templeton Gap District of Paso Robles.  This vineyard is one of the great rosé vineyards in Paso Robles and we were ecstatic to be offered 3 tons of this wonderful fruit.  Hollyhock Vineyard has made up a large portion of Tablas Creek’s Patelin rosé for many years and has a great pedigree.  The soils are silicious shale on a steep hillside with plenty of coastal influence producing great freshness and depth. 

The 2020 rosé was picked on September 24th at 23.4 brix and whole cluster pressed into a stainless steel tank.  We used a yeast propagated from the world’s greatest rosé region, Bandol, a region known for rosés with great aging potential, structure, and freshness.  After a long and slow fermentation, the rosé was aged in a stainless steel tank for two months.  This wine was sterile filtered and bottled on January 8th.
